Holiday Sweet Potatoes

Description

We like simple baked sweet potatoes served with plenty of butter and maybe a dash of brown sugar or cinnamon, but if you want something just a little more fancy for Thanksgiving dinner, this recipe will do the trick!

Ingredients

 medium sweet potatoes
4 T grass fed butter
1 T fresh-squeezed lemon juice
2 T brown sugar
1⁄4 t ea salt, or to taste
1⁄4 t cinnamon, or to taste
Prep time: 10 minutes Cooking time: 1 hour Total time: 1 1⁄6 hours

Instructions

Preheat oven to 350 degrees. Peel potatoes and slice into rounds 1.5 inches thick. Rub butter onto bottom of glass baking dish. Place potato rounds evenly across dish in a single layer. Use two dishes if necessary. Melt butter and combine with lemon juice, salt, cinnamon, and brown sugar. Drizzle evenly over potatoes. Roast, covered, for 30-40 minutes until nearly fork tender. Uncover and roast 5 – 10 minutes more until fork tender and glaze has become syrupy. Or microwave covered or 20 minutes or so, then microwave for 5 minutes more uncovered.
