Portobello Personal Pizzas



People, allow me to introduce you to a little bit of pizza heaven: the Portobello Personal Pizza.

Mix together some pork sausage, garlic, green pepper, mushrooms, pizza sauce and parmesan cheese….stuff it onto the top of a roasted portobello mushroom, top with shredded mozzarella…broil….wait…wait…wait…with mouth watering….and BAM! Pizza HEAVEN.

6 large portobello mushrooms

1 tablespoon olive oil

1 pound bulk pork sausage

1 jar (15 oz) pizza sauce

1 medium green pepper

1 medium onion

4 cremini mushrooms

2 garlic cloves

1/4 cup grated parmesan cheese

1 cup shredded mozzarella cheese



1.  Heat oven to 350 degrees. Take stems of portobello mushrooms and lay stem side down on a lightly greased baking sheet. Drizzle with 1 T olive oil and then bake for 20-25 minutes until tender, turning once.

2.  Meanwhile, make the filling for the pizzas. Brown the sausage until it is cooked through. Dice the onion, cremini mushrooms, and green pepper very fine. Mince the garlic. Saute the garlic, onion, mushrooms and pepper in a bit of oil until slightly tender.

3.  Add the cooked sausage and cooked veggies to a medium bowl. Add the pizza sauce and parmesan cheese and mix well.

4.  Place the cooked portobello mushrooms stem side up on the baking sheet. Top evenly with the sausage mixture. Top with shredded mozzarella cheese.

5 . Broil the Portobello Personal Pizzas for 2-3 minutes until lightly browned and heated through.
