Ten Fabulous Friday Meals That Last the Whole Weekend

I don’t know about you, but I am SUPER busy all weekend.

We have soccer games, birthday parties, church (twice!), teaching, lesson planning, stuff to do around the house, and of course, Family Fun Friday, where we make a point to gather as a family for some special treats, games, and movies.

Plus, I usually do some batch cooking on the weekends, stocking up on pancakes, waffles, rice, bacon, and hard-boiled eggs for the week.

That means I don’t want to be worrying about what to cook for dinner! Especially on Sunday night when we all get home from church at 7:30 pm tired and hungry!

My solution: I make a really BIG meal on Friday (often in the crockpot, because it’s so conducive to cooking big cuts of meat with lots of veggies to boot) and we eat off it all weekend long! We never get tired of it, because:

 a)      I always make something super yummy and delicious that I know we won’t be tired of by the third time we eat it,

b)      I switch it up all the time….rotating recipes and meal plans so we don’t get bored.

We LOOK FORWARD weekends of GREAT FOOD and all the free time we need to do all we want to do!

Here are 10 of my favorite FABULOUS FRIDAY BIG MEAL PLANS:

  1.  Naked Ground Beef Enchiladas (2 pounds of meat), Spanish Rice (1 ½ cups dry rice), plus plenty of fresh fruits and veggies to go with it. You can serve this so many different ways. Mix the meat, rice and salad veggies all together to make Enchilada Rice Salad; serve it on tostadas; serve it on tortillas (homemade Gluten-Free Tortillas or store-bought corn tortillas); or just serve each dish separately on a plate.
  2. Meatloaf (2 pounds meat) and Vegetable Soup, and maybe also some Sweet Potatoes in the crockpot.
  3. Weekend Pot Roast (3.5 lb cut of meat), plus some carrots and potatoes thrown in to provide veg and starch.
  4. Teriyaki Chicken Stir Fry (2 pounds meat), Tortillas (Gluten-Free), white rice (1 ½ cups dry rice), and salad veggies.
  5. Pulled Pork (3-4 pound cut of meat with bone-in), Sweet Potatoes in the crockpot, and steamed carrots and broccoli.
  6. Beef Roast with Cabbage (about 3-4 pound roast), Roasted Broccoli, and Boiled Potatoes
  7. Carolina Shredded Chicken (2-3 pounds), Cole Slaw, and Oven Roasted Potatoes
  8. Taco Meat (2 pounds), with plenty of salad veggies, tortillas and fresh fruit to go with it.
  9. Beef Stew (Slow Cooker) (2 pounds of meat) with fresh fruit and spinach salad to go with it.
  10. Barbecue Chicken Quick and Easy, Brussels Sprouts with Bacon and Dill, and Mashed Potatoes (Dairy-Free).

All these meals feed my family of four dinner from Friday night through Sunday night. I cook it up on Friday, and enjoy the rest of the weekend with my family. And of course, this strategy can be used to help you through a busy mid-week as well! Cook it up on Monday, and don’t cook again until Thursday.
