Worms-in-the-Mud Halloween Cupcakes (Gluten-Free)


I was asked to bring cupcakes to my daughter’s preschool Halloween party. I wanted to provide something fun and delicious that didn’t have gluten, trans fats, industrial oils, or artificial colors and preservatives. Here is what I came up with!


 gluten-free chocolate cake mix (I used Betty Crocker)
1 package dried kiwi
 bag gluten-free chocolate cookies (I used Pamela’s brand)
2 T butter
2 c powdered sugar
2 T unsweetened cocoa powder
1 dash sea salt
2 T coconut milk (use more as needed to get right consistency)

Bake cupcakes according to packge directions and let cool completely.

Crush chocolate cookies in a ziplock bag with a rolling pin. Pour crushed cookies onto a plate.

Cut kiwi slices into thin strips.

Make frosting by melting butter and stirring in salt, powdered sugar, cocoa powder, and coconut milk. Add additional coconut milk 1 teaspoon at a time until you get a good thick consistency.

Spread a thin layer of frosting on each cupcake. Dip in crushed cookies. Put a little bit of frosting on a kiwi strip and place on top of crushed cookies to look like a little green worm crawling the mud.
